This Gin & Jam cocktail is a great template to use with whichever jelly you want to experiment with. Here we used a locally sourced Raspberry and Chipotle Pepper Jelly. Here we used Death’s Door Gin whose juniper, coriander, and fennel botanicals compliment the jelly nicely but this may have also been delightful with a standard Hendricks Gin for those who aren’t a fan of juniper gins. The Noir bitters emphasize the chipotle notes adding a little more smoke as well as a slightly nutty finish.
Depending on your jelly you may want to try a whole variety of gins; Will it be citrus forward? A juniper bomb? Maybe something smooth and botanical? Or the old reliable London Dry? You could also go in many directions for the bitters depending on your flavors. We could have easily gone with a citrus bitter here if we wanted to brighten the flavors.

Ingredients
2 oz Gin
.5 oz Raspberry Chipotle Pepper Jelly (roughly one bar spoon dollop)
2 dashes Remedy Cocktail Company Noir Bitters
Garnish:
Spoon of Jelly
Instructions
Place gin and jelly in a shaker full of ice and shake it… shake it some more… now shake it like you mean it! Strain into a rocks glass over a large cube and garnish with a tea spoon full of the same jelly.
